Just
as the quantity is up this year,
so is the quality. In fact the
sheer number of outstanding lists
prompted a new innovation for
this year's guide. Scattered throughout
the AA Restaurant Guide 2002 you
will find a number of special
awards recognising lists that
are remarkable in a particular
respect. Be it the coverage of
a particular region or simply
the excellence of the presentation,
these are the lists that deserve
special recognition. |
For the
second round of judging, we once
again turned to the thorny subject
of matching wine with food. Something
of an art,the panel agreed that
the secret is to look at the meal
as a whole rather than tackling
each dish in isolation. |
Although
there can be no hard and
fast rule for such a subjective
task some useful guidelines
were applicable.
- Light
wines
before
heavy
- Young
wines
before
old
- White
before
red
- Simplicity

- Match
